I think this recipe is a magic.
..and yes it is definitely our other big favorite. I make this recipe at least every second week.
Because: it is low carb, it is so soft and moist, it is versatile..and it is amazingly easy to prepare as it needs ONLY TEN MINUTES on-hand preparation time …and your family will kiss even your toes! 🙂
…Yes, this is what I call magic 🙂
So this is what you need for this:
1 cup cottage cheese
1 cup almond flour ( you can use any low carb flour alternatives)
1 tsp baking powder
1/4 tsp salt
3/4 cup ham
3/4 cup cheddar cheese ( you can also add some parmesan )
( optionally you can put some chopped onions, or bell peppers or jalapenos)
Preheat the oven for 400F.
Mix the ingredients together.
..than scoop the mixture to the muffin cups ( I strongly advice a silicone muffin pan for baking muffins in general).
Put it to the oven and bake it for about 25-30 minutes or until the top turns golden.
Take them out, serve them hot or cold..and finally: feel the magic! 🙂
