Low carb ChoCoco balls

Soft chocolate-coconut balls..melting in your mouth, the lovely coconut, chocolate and rum aroma are a perfect blend!
It is low carb, sugar free and gluten free.
Packed with proteins, magnesium and antioxidants!
No baking needed!


Perfect for kid parties for an easy and neat dessert idea, for unexpected visitors or just for a nice and healthy treat to the lunchbox for your child.
On hand preparation time: 20 minutes.

Ingredients:

1,5 cup almond flour
1 cup unsweetened shredded coconut
3/4 cup sweetener ( I used Pyure Organic Stevia Blend )
2 tbsp raw cacao ( I used Navitas Natural Mayan Organic Raw Cocoa powder )
( If your child reacts badly to cocoa powder, try to put peanut butter or peanut powder instead!)
1 cup unsweetened  coconut milk
2 tbsp coconut oil
1 tsp vanilla extract
( 1/2 or 1 tsp rum aroma -optional)

( + 1 cup unsweetened shredded coconut for the balls to roll in )

Preparation:

1.  In a bowl mix all ingredients until well incorporated. You have to get a very soft dough texture what can be still moulded.
( If your dough is resulted too hard you can add more coconut milk until you get the desired soft texture.
If your dough results too soft you can add some more shredded coconut to harden it. )
2. With wet hands form balls with approx. 1-1,5 inches diameter.
3. Roll each ball in the shredded coconut to cover the entire surface of the ball with the shredded coconut.
4. Place them in a dish and let them chill in the fridge for 30 minutes.
Approx. for 20 servings.

Tips:
Do not worry if the dough is too soft, while chilling in fridge it will get a bit harder!
You can put a (pitted-canned) cherry in the middle of each balls it gives an extra delicious taste.
You can also add raw maple syrup for a special taste.
If your child reacts badly to cocoa powder, try to put peanut butter or peanut powder instead!
You can also roll the balls in chocolate sprinkles ( but in this case you have to calculate the extra sugar content! )

Nutritional facts for the whole amount:

Fat: 165 g
Carb: 57 g
Sugar: 7 g
Protein: 40 g

( Approx. 2 g carbs each ball )
